A BIT ABOUT THIS COFFEE

This delicious washed coffee was grown and processed by Mr Chatree Saeyang in Khun Chang Kian village, Chiang Mai province. For this lot Mr Chatree has implemented a unique take on the fully washed processing method by substantially extending the fermentation period.

After picking, the coffee cherries are rested in a cool, dark environment for a few days before being pulped. Then the coffee is submerged and fermented under water for a further 3 days after which the parchment is dried on bamboo raised beds for 14 days. The parchment is then cured for further 2 months inside Chatree's home.

Bright & Sweet. Lively stone fruit and citrus flavours are wonderfully rounded off with white choc sweetness and a hint of black tea. A superb washed coffee from Thailand.

This coffee is best drunk black. We think it's great brewed anyway, just leave the milk out!

THE STORY

Khun Chang Kian village is in the heart of Thailands oldest growing region and thanks to innovative coffee producers like Mr. Chatree it has become a central hub for specialty coffee production in Thailand.

Mr Chatree see's coffee as a means to elevate the lives of his fellow community members. To do this, over the past decade, he has been experimenting with coffee processing methods to enhance the wonderful natural characteristics of their local arabica varieties. The results have been impressive garnering him many national awards, including a first place in 2019 with one of his lots being scored over 90 points. The move away from commercial production has also meant switching back to chemical free organic techniques.

Being one of the original areas cultivating arabica coffee in Thailand, Khun Chang Kian is home to many heirloom Bourbon & Typica varieties and also some very rare Ethiopian Landrace trees that are hidden here and there. Efforts by farmers and producers like Chatree are making the most of this potential and putting Thai coffee well and truly on the map.
