The Merlaeku family, whom we’ve partnered with since 2020, are among the most experienced producers in their village.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eWe love coffee from this part of Northern Thailand. Doi Pangkhon offers a unique combination of altitude, distinct microclimates, picturesque terrain, and an impressive diversity of arabica producers. The region continues to surprise us with coffees that are both vibrant and nuanced.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eThis is a honey-processed microlot. After harvest, ripe cherries were floated to remove defects, then pulped with water—removing roughly 50% of the mucilage from the parchment. The goal with this method is to retain a clean and bright profile while adding body and sweetness through partial mucilage fermentation.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eThe parchment was then dried in a thin layer on raised beds, turned several times a day to prevent overfermentation and promote even drying.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eDoi Pangkhon sits between 1,250 and 1,450 meters above sea level. While this might seem moderate compared to other growing regions, its latitude—19°N—means the climate is considerably cooler than many other origins at similar elevations. For comparison: Nariño, Colombia sits near 1°N, and Tarrazú, Costa Rica around 9°N, where coffee can grow comfortably above 1,600 meters.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eThis lot is a mix of Catuai, Typica, Chiang Mai 80, and SJ133 varieties.
