A BIT ABOUT THIS COFFEE

This wonderfully clean and softly sweet coffee comes from Khun Lao village in Chiang Rai province. It was processed using an anaerobic natural processing method, whereby the coffee is initially rested and fermented in an oxygen deprived environment before being carefully dried in a environment where temperature and humidity are both kept low. Humidity, rainfall and temperature variations are among many things that often hinder the production of naturals in Thailand, but we are seeing educated techniques being implemented to create successful outcomes. Only a small amount of this stunning natural lot was produced. A combination of careful processing, a unique variety and the terroir gives this coffee a bright, clean character with superb sweetness.

THE STORY 

The mountainous parts of Chiang Rai Province are fast becoming a hub for young and passionate smallholder producers. Thanks to good prices and high demand for Thai specialty coffee there's a viable future for young farmers to make a living here. Production in this area is thanks to the royal project initiated by the late king in the 70's to eradicate opium production, rejuvenate the forests and create employment alternatives for rural minority people. Fast forward a few decades and specialty arabica production has become very sophisticated and the results are fantastic.

The variety of arabica is Chiang Mai 80, a Thai hybrid combining SL-28 from Kenya, with Catimor (Caturra x Hybrid de timor). This variety combines positive cup quality potential with some protective benefits against the problematic coffee leaf rust.
